Catherine & Pierre Breton, Vouvray Brut Sec "La Dilettante", NV bordeaux_futures_2019 prized for its balance andLa Dilettante is Catherine Breton's personal project, the dry Vouvray she has been 'dabbling' with since 2002, and it shows in how precise it is. The fruit comes from roughly 40 year old Chenin Blanc vines on flinty (silex) soils, gently pressed and given a short vinification in stainless steel, with no malolactic fermentation so the natural acidity stays razor sharp. Bottled the spring after harvest, it's about purity and tension rather than weight.
