Lemon juice, zest and pith bring fresh sunny days to mind, and a wonderful acidity, while malolactic conversion and oak bring pastry, butter, vanilla and cloves. The result is lemon tart in a glass. Crispy chicken in mustard sauce alongside this looks like an excellent idea!
