To ensure maximum freshness, the fish is boxed and iced as soon as its brought aboard, and fishing trips are kept short. When fresh hake arrives at the Farm Shop, our expert Fishmongers waste no time in preparing it, curing and then smoking it over beech chippings in the traditional way.
