The juice is immediately cooled, cleaned and stocked avoiding the fermentation. During the partial fermentation (up to 5% of alcohol) in pressure tanks at controlled temperature this wine takes the little effervescence and froth. As a result, Villa M is decidedly sweet, delicious and aromatic.
